The apple compote and candied nuts provide an added texture and flavour to make this dish even more outstanding. Also, the candied nuts make great snacks and gifts by themselves. Categories: Candy & Nuts Side Dishes Granulated Sugar Dark Brown Sugar Ingredients What you need for the candied nuts 1 large egg white ½ cup (100 g) Redpath ® Granulated Sugar 1 teaspoon Chinese 5 spice, pumpkin pie spice, or apple pie spice mix 1 teaspoon ground cinnamon ½ teaspoon salt 2 cups (220 g) pecan and or walnut halves What you need for the apple compote 1 tablespoon (14 g) butter 3 small Gala apples, diced, with skin on ¼ cup (55 g) Redpath ® Dark Brown Sugar ½ teaspoon Chinese 5 spice or pumpkin pie spice ½ cup (125 mL) water 2 teaspoons (10 mL) lemon juice What you need for the baked brie 1 wheel (approximately 400 g) brie Instructions How to prepare the candied nuts Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper. Whisk egg white in a large bowl until foamy. Add sugar, spices and salt. Whisk until mixture is thick and opaque. Add nuts; stir until coated. 3. Using forks, transfer nuts to sheet, spreading them out as evenly as possible. Discard remaining coating. 4. Bake nuts until deep golden brown, about 35 minutes. Let cool completely on the baking sheet. If not using the same day, store in an airtight container at room temperature for up to 4 days. How to prepare the apple compote Fry the diced apples with butter for about a minute, until slightly softened. 2. Add the sugar and spice, then let cook for 3 minutes, stirring frequently. 3. Add lemon juice and water, then cook down for about five minutes, until apples are soft. 4. Once fully cooked, remove from heat and set aside. How to prepare the baked brie Preheat oven to 350°F (175°C). Place wheel of brie in an oven safe container and bake in the preheated oven for 25 minutes. Top with compote and candied nuts and serve immediately with baguette slices and crackers. CHEF'S TIPS If you don't have a dish dedicated to baking brie, that's ok, you can use a pie plate. Just place the brie in the centre of the pie plate for baking. Then when it comes time to serve the brie, you can place crackers or bread in the empty space around the brie, making it the perfect serving platter. Feel free to substitute any nuts that you have on hand for the pecans or walnuts. Just simply substitute 1 for 1. We recommend trying peanuts, pistachios or cashews.
