Granny Smith apples bake up beautifully and are the perfect blend of sweet and tart. Categories: Syrups & Sauces Snacks Canada Day Winter Nut-free Serves 4 servings Prep Time 20 minutes Cook Time 20 minutes Ingredients For the Sweetened Cream Cheese: 8 oz (227 g) plain brick style cream cheese, softened 2 tbsp (28 g) Redpath® Golden Yellow Sugar, packed 1 tsp (5 ml) vanilla extract For the Apples and Caramel Sauce: ¼ cup (57 g) salted butter, divided 4 granny smith apples, peeled and sliced into wedges ½ tsp (1 g) ground cinnamon ¾ cup (163g) Redpath® Golden Yellow Sugar, packed ⅓ cup (80 ml) heavy cream 1 tsp (5 ml) vanilla extract Instructions For the Sweetened Cream Cheese: Place cream cheese, Redpath® Golden Yellow Sugar, and vanilla extract in the bowl of a stand mixer. Using the paddle attachment, beat until combined (alternatively you can use a large bowl and a hand mixer). Refrigerate mixture until needed. For the Apples and Caramel Sauce: Melt 1 tablespoon (14 g) butter in a heavy-bottomed frying pan over medium heat. Add apples and cook, stirring often, until apples are slightly softened and golden; 4-5 minutes. Stir in cinnamon and cook for an additional minute. Remove to a bowl and keep warm. Add remaining butter to pan along with the Redpath® Dark Brown Sugar. Whisk until sugar dissolves and mixture resembles a thickened liquid; 4-5 minutes. Carefully whisk in heavy cream and vanilla extract. Transfer to a measuring cup or a bowl with a spout for easy pouring. Divide cooked apples between serving dishes. Place spoonfuls of chilled cream cheese to mimic curds over the apples and drizzle with caramel sauce; serve warm.
